OUR PROCESS
Making the UK’s first mid-strength wine didn’t happen overnight. We spent over 2 years creating the wine that has it all. We travelled the world to find the right suppliers and trialled countless recipes and blends.
We landed on our partners in Bordeaux because of their unmatched expertise and commitment to quality, working alongside experienced winemakers in one of the world’s most renowned wine region of the world.
We tasted and perfected our 6Percent wine over years of recipe refining. By combining expert winemaking with Bordeaux’s finest grapes, we’ve shaped 6PERCENT into a wine that’s balanced and full of flavour.
Our wine making process
Harvest
The best quality grapes from over 300 vineyards. Each year we listen to the vineyard and adapt what we have to what nature provides.
Ferment
We ferment each batch with care to a full strength Bordeaux wine. We adjust the process depending on the condition of the grapes each year. By carefully controlling temperature and timing, we bring out the best flavours, balance, and character in the wine.
Gently remove alcohol
To reach 6% ABV, we use vacuum distillation. This gentle process removes alcohol at room temperature, preserving the delicate aromas and complex flavours of the original Bordeaux wine. It’s slow and meticulous, but allows us to remove alcohol without losing the soul of the wine.
Blend to perfection
After that, we carefully blend the dealcoholised wine back with the original wine to reach 6% ABV. This step is all about balance. By combining the two thoughtfully, we preserve the structure, aromas, and character of the wine while creating a lighter, healthier style. The result is a wine that keeps its soul, but just at 6% ABV.
Bordeaux 2024 Vintage
The 2024 season in Bordeaux was a masterclass in "quality over quantity." A classically damp French spring naturally thinned the vines, leading to the lowest yields the region has seen in decades. While there were fewer grapes to pick, the fruit that survived was spectacular—vibrant, aromatic, and incredibly pure. A warm summer helped the remaining grapes ripen beautifully, making them naturally more concentrated and flavourful.
What these means for our wine? Naturally fuller in body, richer flavour and less sugar added.
